Ingredients:
- 1 cup BulkFoodsDirect.com Whey Protein Isolate
- 1 cup flour
- 1 cup whole wheat pastry flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 cup + 2 Tbsp. butter, softened
- 1 cup sugar
- 2 eggs
- 1/2 cup sour cream
- 2 large bananas, mashed
- 1 tsp. vanilla
- 1/2 cup walnuts, coarsely chopped
- 1/2 cup chocolate or carob chips
Directions:
Preheat oven to 325 degrees.
Sift together flours, baking powder, baking soda, and protein powder. Set aside.
Beat butter, sugars, eggs, sour cream, bananas, and vanilla, nuts, and chips until blended. Add the sifted dry ingredients and stir until all is just moistened. Do not over mix.
Divide batter between 4 greased and lightly floured mini-loaf pans, place pans on cookie sheet, and bake for 35-40 minutes until cake tester, inserted in center, comes out clean.
Run a knife around the bread to loosen from pan and then cool before removing from pans.

- Blend together oat flour, whole wheat flour, whey protein, vital wheat gluten, guar gum, salt and baking powder.
- Add oil and mix together well.
- Stir in water with a fork, 2-3 Tbsp at a time.
- Dough will be sticky. Knead between two pieces of plastic wrap (or in mixer with dough hook attachment) for 2-3 minutes. Form into ball, cover and let rest 30 minutes.
- Divide dough into 10 pieces and roll into balls. Cover and let rest 20 minutes.
- Roll dough out thin (1/16-1/8 inch) between 2 pieces of plastic wrap and cook on hot griddle for 30 seconds per side, or cook using a flat bread maker (following manufacturers directions).
